I love this purchase. But it took a bit of work to get there. I’d read other reviews that said additional seasoning before active use was a good idea. I made the mistake of trying to do this with olive oil I had on-hand – Do Not Repeat My Mistake. Unless you like a smoke-filled home when trying to sear a steak… Olive oil has a low smoke point & will not withstand getting the pan hot enough to sear (preheat in 400 degree oven for 30 mins).So! I stripped this & the original seasoning from the skillet by using the self-clean function on my oven for about 90 mins after watching a great youtube video that I apparently can’t post here. Just search how to strip seasoning from lodge cast iron.The video also has pretty detailed instructions for re-seasoning. Instead of using crisco as shown though, I used Flaxseed Oil, after doing more research. As I don’t use it every day, it was the better choice since animal fat oils can go rancid. I repeated the re-seasoning process 3-4 times, turning the oven off & allowing the pan to cool in the oven *mostly but not entirely* between each seasoning.And wow. Outstanding. Seriously great result. I’ve cooked eggs in this thing with *zero sticking* (jaw drops).As far as cleaning – No Soap. Period. It’ll mess up your seasoning. Just wash in warm water *while the pan is still warm (!)* & a soft cloth/sponge. Nothing abrasive. Dry Immediately – No Drip Dry. Unless you need rust in your diet. And, again, while still warm, rub lightly & sparingly with a bit of flaxseed oil using a paper towel. Great purchase.

Nice factory pre-seasoning. Surface not as smooth as the ones from early 20th century. Rims are nicely cut and fit well. No jamming – this is not a pressure cooker. Without a bail or feet this is not for open fire back country cooking. For stovetop or oven, perfect. Few women are likely to like the weight but my son takes over cooking when this is used. The metal is as good as a 100 yr old Griswold we have. Stews and bread in this are very good. Beware acid foods like tomato dishes as they remove seasoning on any cook pot. If you use an outdoor stove, be sure it is very strong – this will be over 20lb, full of food.

The lodge 5 quart, 12 inch skillet works so good. I have smaller diameter lodge dutch oven that is great for a dutch oven, but I wanted something with more surface area. I also have a regular lodge 12 inch skillet but it isn’t deep enough for frying. This is the perfect missing piece to my collection. It has a 12 inch diameter but is also deep and the lid fits nice and tight.I have tried the much pricier enamel cookware but lodge is a great price and works well. There are no hot spots, the casting of the iron is good with few rough spots. The inside surface is smooth.

Lodge pre seasons their pans. I don’t care for how they do it, nor do I like the rough surface on thier products as it limits the “non-stick” properties of cast iron. But I have seen claims that their cast iron isn’t real when someone sees a “chip” on a pan. Thats seasoning flaking off. Its not fake iron, its legit, affordable, quality cast iron. I use this for baking sourdough bread, and it works perfectly. I don’t cook in it otherwise.

This skillet with it’s tall sides is great for cooking my keto recipes. Clean up is easy. My range is a glass top, and I am careful to lift this pan versus sliding it and other than it is heavy and you need a hot pad, it is no problem. I now prefer it over the non stick pans in my cabinet. It works both on the stove top and in the oven. It holds heat well; I made a dish in it for the holidays and took it in the lid covered pan, wrapped (insulated) in a big bath towel in a cardboard box and it both traveled well and was still warm for serving.
