    Best Canner and Worst Cooker

    I’m giving this 3 stars because it’s either 5 stars or 0 stars, depending on your intended use.If you’re looking for a canner, All American has to be the best there is, bar none. The exterior machining and polish is superb, the top has a mirror finish. The top has a pressure gauge, a safety pressure release, and no “idiot proof” interlock to get clogged up. There’s no lid gasket, but the machining is so good that none is needed, the seal is perfect. The unit comes with a 3 position regulator for 5, 10, and 15 PSI, and a tray for your canning jars. The entire thing is very heavy, it’s built like a tank.On the other hand, if you’re just looking for a large pressure cooker, you’re going to be very disappointed. The interior surface is rough machined, not polished, and definitely not mirror finished. There are grooves that form concentric circles on the inside of the bottom, resembling an old LP phonograph record. The groves continue up the inside walls of the bottom half of the cooker. Anything you cook will leave residue in those grooves that will be impossible to clean. It looked absolutely disgusting after a single use.I emailed the manufacturer and they said that despite it being sold as a pressure canner cooker, nobody actually cooks in them, they are used exclusively for canning. They said the grooves on the interior surface are a cost saving measure and they suggested looking for a stainless steel model from another manufacturer if I wanted a pressure cooker.Bottom line, I used it once for cooking and loved absolutely everything about it except for the fact that the interior could not be cleaned. If All American were to provide a mirror finish on the interior, I’d buy this again in a heartbeat.

    Simply Amazing! The Rolls Royce Of Pressure Canners! Pressure Maintained As Steady As A Rock!

    Wow! I purchased this All American 915 seven quart pressure canner last March from Amazon, but I never had an opportunity to use the pressure canner until now. As you could see from the photo, I was obviously canning something today, and it happened to be the Miragreen sweet peas that I had grown from my backyard garden. From the very start, the All American 915 pressure canner was simple to use, and it had a super tight seal due to the precision machining. Now, to make a long story short, after the All American 915 pressure canner reached the 10 PSI that the sweet peas called for, I simply adjusted the gas flame a bit on my kitchen stove so that the 10 PSI weight would bobble occasionally. Amazingly, all through the canning process , the All American 915 pressure canner would maintain the exact 10 PSI as steady as a rock. Wow! Now, halfway through the 40 minute canning process, the phone rang, but I was easily able to converse with a friend as I knew that the All American 915 pressure canner would continue maintaining the proper pressure regardless. In fact, all I really needed to do at that point was to take a quick peek at the kitchen clock so as to monitor the canning time. Yes, you guessed it, I had a nice looking and mouth watering batch of canned peas afterwards. Don’t settle for anything less. Get your All American 915 pressure canner now!

    Do your research!

    I bought the 921 canner, named her Monica, and we have already canned 6 cases of jars. This canner is a really beautiful machine – but please do your research. I watched you tube videos and read books and articles and only after I full understood the process did I can for the first time. I started with potatoes (cheap if you mess them up) and had a little difficulty with the seal leaking – it needed to be screwed down tighter, alternating opposite sides at first, then the individual adjustment to fully close. ALWAYS OIL THE RIM to ensure the seal. Follow the careful procedure of checking the valves, cleaning and checking the inside, lining the lid up properly, and adjusting the wing nuts to ensure the lid seal.And give yourself plenty of time. Seems like things go sideways when folks rush the process. Canning takes patience and research. And this awesome, reliable, built to last canner.

    When you hear the jiggle you must adjust for the wiggle!

    This is a fantastic pressure canner. I did pressure canning for the first time and it couldn’t have been easier. I made 14 quarts of chicken stock. I vented the canner first and then attached the weighted gauge and when it got to ten pounds of pressure and started to giggle, I started a timer for 25 minutes. As I was waiting for the 25 minutes to wind down I noticed that the gauge stopped wiggling and was just hissing. Since the pressure was still at ten pounds I just left it. Then I started to wonder why the weight gauge wasn’t rocking back and forth and wiggling like I thought it was supposed to do. This is when I noticed the pressure was at 12.5 pounds. I thought, hmm., I thought the weighted gauge was supposed to keep the pressure at 10 pounds and I wish it would wiggle and not just hiss, but I left it until the 25 minutes was up. Then I shut off the heat and as the pressure dropped to 10 pounds the gauge started to wiggle like crazy. Eureka! So that’s how it works. The gauge will start to wiggle when it hits 10 pounds, but the wiggling will stop if it goes higher and just hiss. So one has to adjust the heat. So next time when I hear the giggle, I’ll adjust for the wiggle. :-)But back to the canner. I like being able to do 14 quarts at a time. I like that it doesn’t have a rubber gasket and is very solidly made and will last for generations. I also like that it has both a dial gauge and a weighted gauge. I like the weighted gauge better since I can hear it and not have to look at the dial.

    This is the best pressure cooker.

    If you don’t like to handle big, heavy kitchen accessories, then you might look elsewhere, or buy a smaller version. Having said that, this cooker exceeds all my expectations. From the first attempt, every meal was amazingly delicious. I always like to cook enough to freeze some meals for later. This cooker is perfect for that. Some people complain that they can’t get the lid on straight. Believe me, learning to do that is well worth having a metal-to-metal seal. The first method is to look at the gap between the lid and the pot from the front and adjusting to make the gaps on the left and the right equal. Then turn the cooker one quarter turn and adjust as necessary. The other method, for folks who have trouble judging the lid to gap distance, is to have someone cut a piece of wood about six inches long that matches the required gap. Once you have the right thickness, have the wood cut into three pieces. Then put the pieces between the lid and the pot and evenly spaced to guarantee the alignment. Then pull out the pieces of wood, and loosely close the clamping screws. Finally, tighten the screws on opposite sides. This sounds like a lot of work, but only takes seconds.One advantage of having a deep container is that browning meat does not get grease all over the kitchen. Yes, it takes a bit longer to heat than lighter versions. It really is a short heating period. I have a gas stove, which works very well. I use this cooker so often that I keep it on the counter. If you wait for the pressure to come down to zero, as you should, the lid practically cleans itself.You can get parts for these All American cookers right here on Amazon. I know my cooker will outlive me.If capacity is a concern, as in wanting small portions, you can get an additional smaller pressure cooker for those times. This one is still the best value, in my opinion.tip: Don’t change the pressure regulator once it is steaming up. Also, wash the regulator by hand after use and let it air dry. Store it in open air. I hit it with some food-safe silicone spray, such as is available from LEM.tip: Whatever you are cooking, don’t be afraid to add other things from your fridge, even if they seem too old for normal cooking. You will have some pleasant surprises.
